In the bottle: The nose presents a sweet and fragrant sake-like profile right away, with prominent hints of melon and peach, plus subtle nectarine and wildflower notes. As the first sake kasu (kasutori) shōchū tasted, the smoothness is striking—almost defying the alcohol content (typically 25% for standard bottlings, though higher in some aged versions). The overall aroma feels refined and inviting, clearly previewing the elegant, fruit-forward experience awaiting in the glass.

On the rocks: Unbelievable—this may be exactly what sake lovers have been waiting for. It captures the essence of premium ginjo sake in a more controlled, sippable form: the familiar melon/peach flavors intensify like a strong daiginjo, but the higher proof and distillation allow paced enjoyment without the risk of overindulging. As it mellows, sweeter, syrupy sake notes rise to the surface. The finish brings a mild, lingering alcohol warmth that evens out into clean sake tones—refreshing yet sophisticated, with excellent balance and drinkability.

水割り Diluted with water

4:1 ratio: Fruit impact softens slightly, with a touch more alcohol perception, but it remains very pleasant. The drink stays clean and smooth, with subtle melon/peach and floral notes persisting. Nothing lingers intensely on the palate, but the residual impression is refined and easy—ideal for lighter sessions.

2:3 Ratio: Most of what makes this shōchū exceptional fades significantly. Fruit and sake character dilute too much, leaving a less compelling pour. Not recommended—higher water ratios mute the defining elegance.

Reflections on this shōchū

  • This was my first experience with kasutori shōchū—distilled from sake lees (the remnants after sake fermentation)—and it immediately proved how much incredible diversity still exists in the category. There are clearly many great bottles left to discover, and this one opened the door to an entirely new style.

  • Coming across it through a recommendation from a small shop owner in a remote town almost in the middle of nowhere made the find feel even more special. Those serendipitous moments—stumbling on a hidden gem in an unlikely place—are part of what keeps exploring shōchū so rewarding.

  • Amabuki Ginjo Kasutori captures the essence of premium ginjo sake in a more controlled, paced format. You get all the familiar fruity melon/peach notes and elegant floral yeast character, but distilled and at a strength that lets you sip slowly without the risk of drinking too much too quickly. It’s an ideal bridge for sake lovers who want to enjoy those flavors in a longer, more relaxed session.

  • The bright, juicy melon/peach profile makes this a perfect shōchū for hot summer evenings—refreshing, aromatic, and light on the palate. It seems like it would work exceptionally well as a highball mixed with soda water, letting the fruitiness shine through with added effervescence and chill. A simple, elegant way to extend the enjoyment on warm nights.
