In the bottle: As soon as you crack the bottle you are treated to an intense wash of sweet potato that is both fresh and inviting. After the initial burst, Inishie Hachiman flows into some excellent custard, vanilla, and slightly nutty notes, which reminds me of cracked almond shells. With a little bit of oxygen you can catch some of the funkier aged notes which are a bit similar to some of the cave aged Awamori I have. Overall, these earthy vapors balance nicely with the sweetness giving a great impression of what is in the bottle.

On the rocks: This is something absolutely special, the intensity of the sweet potato is amazing, and even with all that intensity the flavors are clear and well defined. Once the impact mellows out a bit, you can catch a lot more of what Inishie Hachiman has to offer, this includes what I described on the nose as a well aged Awamori; there is just the right blend of earthy funk and sweetness. The finish is full of complexity, with earth and sweet notes fading in an out, the 37% alcohol does a great job to carry all these flavors through to the end.   

Straight: Absolutely intense, the sweet potato flavors hit full force and almost overwhelm the senses; luckily once you adjust you are treated something magical. Neat in the glas gives a much clearer impression on the aged aspect of Inishie Hachima, as the dry earthy notes are much more prevalent here which adds to the overall drinking experience. The finish here is really nices as the 37% carries a nice range of sweet vanilla, custard and at the end cocoa, which are really just sublime.

Reflections on this shōchū

  • This was a bottle given by a fellow shochu enthusiast, which is one of the things that makes this community so great to be a part of. For those that really appreciate the craftsmanship and care that goes into making such a perfect drink, there is a healthy pride in sharing and recommending a favorite bottle.

In the bottle: At first Hachiman starts off with a deep sweet potato nose that is both smooth and rich while somehow not coming across as overly sweet. As this opens up a bit with a little oxygen, you get more of a fresh sweet potato vibe that is backed by some mature honey, vanilla and dried fruit notes which add a nice balance against the more earthy, wet hay elements that start to come forward as you swirl this around a bit. Overall, Hachiman feels fresh, bright and ready to drink.   

On the rocks: The sweetness here really takes center stage, not sticky sweet but balanced and smooth, a bit like roasted sweet potato. The first wave hits with hints of vanilla, dried fruit and subtle bit of earthiness, not as pronounced as on the nose but still there and adds a nice bit of complexity. As the ice melts Hachiman mellows out nicely and all of the flavors meld together with the sweet potato leading the way which carries over through to the finish which works well to bring you back for the next sip.

Straight: Smooth and rich with the perfect level of sweetness to make this something you would feel comfortable enjoying neat in the class on a regular basis. With Hachiman straight you get everything on the nose and on-the-rocks with just a bit more intensity and clarity. The sweet potato notes have a deep, almost roasted flavor to them which really shows up on the finish as you get wave after wave of potato along with some grain, vanilla and a bit of dried fruits.

Paired with Chocolate: Kaldi 70% cocoa, beautifully rich, Hachiman really brings out the deep cocoa notes and expands on them with hints of vanilla and a slightly earthy backdrop that really ties everything together. As with other shochu pairings I have done with this chocolate, there is definitely a dark chocolate cherry that comes through, especially on the finish; highly enjoyable.

Reflections on this shōchū

  • I enjoyed the bottle of Inishie Hachiman and picked this up over the holidays and it did not disappoint, well worth picking up, especially as a daily shochu.

  • Nice bottle and supper sticky label, today the label won but fortunately I found a nice copy online, not usually so lucky.
