In the bottle: Right from the start, brandy dominates the nose—sharp initially but quickly softening into slightly sweet notes of cream soda and/or cherry cola (for some reason, Crystal Pepsi comes to mind). It’s almost hard to believe there’s shōchū in the bottle at all. The overall impression is unmistakably special: rich, layered, and far removed from a typical rice shōchū pour. The intrigue builds immediately—this is clearly something different, mature, and worth savoring. 

On the rocks: Once it hits the tongue, an explosion of sherry and brandy emerges, amplified by long aging and delivering an amazingly unique range of intense yet smooth flavors. The wood influence—Japanese oak, cherry, and chestnut—integrates beautifully with the rice base, adding remarkable complexity and depth. While all three woods are stated, oak feels most prevalent, lending a structured backbone. The result is powerful but easy-drinking—intense without harshness, layered without confusion. A standout way to experience this rare, wood-aged shochu.

4:1 ratio: The heaviness of the brandy smooths out noticeably, allowing the woody notes to open up and come forward more clearly. The oak in particular feels young and fresh at this dilution—vibrant rather than overly tannic. No strong cherry or chestnut notes stood out here, but the overall profile becomes lighter and more approachable while retaining maturity. (Note: neat in the glass not tried this time—another reason to pick up a second bottle in the future.)

Reflections on this shōchū

  • When I first tried this, I was a little torn. It was so far removed from anything I’d had before in shōchū (except perhaps brandy) that I wasn’t even sure I was drinking shōchū at all. The intense sherry/brandy/cream soda/cherry cola profile hits hard upfront—rich, woody, and almost whisky-like. But once that initial intensity subsides, you’re left with something truly magical: layered maturity, smooth integration, and a refined elegance that feels both luxurious and approachable.

  • I need to research this distillery a little more to see what else they offer—this was an outstanding first entry into their lineup. The multi-barrel aging (Japanese oak, cherry, chestnut) clearly shows thoughtful craftsmanship, and the result is a rice shōchū that bridges spirits categories without losing its identity.

  • At 1,800 JPY, this is an absolute steal. Just buy it and try it. For the level of complexity, smoothness, and sheer uniqueness—especially from a rice base—it delivers exceptional value. It’s the kind of bottle that surprises, intrigues, and rewards curiosity, whether you serve it neat (for full intensity), on the rocks (to let the wood open), or lightly diluted (to brighten the profile).

  • Highly recommended for anyone open to shōchū that pushes boundaries while remaining drinkable and elegant. Ōishi has earned a spot on my must-explore list—looking forward to seeing what else comes from this producer.
