Name: 残波ブラック Zanpa Black

Type: 泡盛 Awamori

Ingredients: 

  • 米(タイ産) Rice (Thailand)

Alcohol: 30%

In the bottle: Smooth, slightly sweet with a hint of freshly steamed rice, caramel, custard and vanilla which are backed by a very subtle earthiness that adds a bit of complexity to the entire experience. Additionally, there is a beautiful fresh note that carries just a hint of alcohol which is not surprising at 30 percent ABV, certainly not overpowering. Overall, Zampa Black is beautifully fragrant and comes across as very well made but also very accessible, especially the price, so time to pour a glass.

On the rocks: For me, this is where the magic happens. All of the amazing notes of rice, caramel, cacao and vanilla spread across the palate, melding into a rich, smooth, and uniquely awamori experience. As the ice melts a bit Zampa Black mellows out nicely as the key flavors remain up front while the intensity is toned down a little. The alcohol does a great job of carrying those beautiful sweet/earthy Awamori notes through to the finish, which here is also a standout and makes Zanpa Black a good bottle to introduce someone to. Overall, highly recommended for a hot summer night, especially when you are looking to have a couple glasses which this is the perfect bottle for.

水割り Diluted with water

4:1 ratio: If you are planning to enjoy more than a couple of glasses, then diluting it a little is recommended; it is just too easy to drink too much.

Straight: Sweet, rich and a bit chocolatey which I did not catch on the first tasting and was a pleasant surprise. The smoothness when enjoyed neat in the glass is really exceptional and without the melting ice you truly get the full Awamori flavor profile that comes through with nothing being masked or diluted. Zanpa Black is still one of the best easy access bottles you can find for the money. 

Paired with Chocolate: Tonny's Chocolonely 70% cacoa. This is one of those pairings where you just feel the world is missing something when it comes to using alcohol in desserts, just amazing. Zanpa Black takes the chocolate and turns it up to 11. This becomes so cacao rich and the Awamori add such a nice backdrop for the whole experience, absolute winner.

Reflections on this Awamori

  • A wonderfully rich awamori with beautiful depth in flavor that smells amazing and mellows nicely as the ice melts.

  • Even with the 30% alcohol, this Zanpa Black is a great bottle to introduce someone to awamori, and considering the price, it is low risk. It’s approachable, clean, and full of character without any harshness or overwhelming intensity.

  • Used a bottle of this for making Umeshu this year, looking forward to how this turns out when I try it sometime next year.

In the bottle: Velvety smooth right out of the gate, with a flood of those beautiful awamori flavors: vanilla, caramel, custard, cacao are all there in full force. Once it opens up and breathes a little, you can find some nice funky aged notes like clay and wet stone; additionally there’s a really pleasant sweetness that reminds me of a bowl full of hard candies. At 43% the alcohol is almost completely muted, and more serves as a carrier of flavors than anything else. Overall, the nose is rich, layered, and deeply inviting.

On the rocks: Deep, rich, and almost pungent, this feels a bit like a condensed awamori. Zanpa Premium is really powerful right out of the bottle, almost a bit to much as before the ice melts a little it is a bit hard to pick out what is there. A few seconds after that first sip gives your tongue gets a chance to adjust and once it does you end up with a really nice finish full of sweetness, vanilla, and custard; there are also some floral notes that stick around at the end reminding me a bit of lavender and honeysuckle. Once the ice melts a fair amount, the intensity drops a bit, allowing the earthy notes to come to the surface a little. There’s is a nice dry funk that gives a good sense of the aging and balances out everything this bottle has to offer.

Straight: That pungent earthy funk is right up front; however, after a couple of seconds Zanpa Premium switches over to some absolutely amazing sweet notes of vanilla and custard. The balance between these two contrasting flavors is perfect, with neither side being too heavy or overpowering which really builds a perfect layer balance to the total experience. Just like on the rocks, the finish has some nice floral vapors which are carried forward by the 43% alcohol allowing you to really enjoy this for a long time.

Reflections on this Awamori

  • Picked this bottle up online at Awamoristreet.com, which is an amazing place to find lots of rare and hard-to-find bottles of awamori. The selection is always impressive, and this one stood out as a solid choice given my past experience with Higa Shuzo.

  • Very intense and pungent (in a good way) and certainly a bottle that should be enjoyed sip by sip. The maturity shines through in every pour; deep toasted rice, caramel, vanilla, custard, and earthy/clay notes that feel rich and layered without ever becoming overwhelming. 

  • Looking at the Zanpa website (seems to have a new marketing image), there are a number of new bottles I’m not familiar with. Seems like some more to explore, definitely planning to browse and see what else they have released recently.
