In the bottle: The moment the bottle is opened, an intense and inviting wave of fresh sweet potato rushes forward. After the initial burst, it settles into rich custard, vanilla, and subtle nutty notes reminiscent of cracked almond shells. With a little air exposure, funkier, aged characteristics emerge—reminiscent of cave-aged Awamori—with earthy vapors that balance beautifully against the underlying sweetness. The overall impression is strong and promising for what awaits in the glass.

On the rocks: This is something truly special. The sweet potato intensity remains remarkable, yet the flavors stay remarkably clear and well-defined despite the power. As the initial impact softens, deeper layers reveal themselves, including the aged, earthy funk noted on the nose—perfectly integrated with sweetness in the style of well-aged Awamori. The finish brings impressive complexity, with earthy and sweet elements fading in and out. At 37% ABV, the alcohol provides excellent structure, carrying all these nuances through to a long, satisfying close. 

Straight: Intensely powerful on entry—the sweet potato hits with full force and can momentarily dominate the senses. Once the palate adjusts, however, the experience becomes almost magical. Neat service highlights the aged character more distinctly, with pronounced dry, earthy notes adding significant depth and interest to the overall profile. The finish stands out as particularly refined: the 37% ABV supports a graceful progression of sweet vanilla and custard, concluding with subtle cocoa notes that feel sublime and lingering.

Reflections on this shōchū

  • This was a bottle given by a fellow shochu enthusiast, which is one of the things that makes this community so great to be a part of. For those that really appreciate the craftsmanship and care that goes into making such a perfect drink, there is a healthy pride in sharing and recommending a favorite bottle.

In the bottle: Hachiman opens with a deep, smooth, and rich sweet potato aroma that feels substantial yet avoids any sense of excessive sweetness. With a little air exposure, fresher sweet potato notes emerge, supported by mature honey, vanilla, and dried fruit accents that provide excellent balance. Subtle earthy elements—reminiscent of wet hay—appear as you swirl the glass. Overall, the nose conveys a bright, fresh, and immediately drinkable character.  

On the rocks: Sweetness takes the lead here—balanced and smooth rather than cloying, evoking the flavor of roasted sweet potato. The initial sip brings vanilla, dried fruit, and a restrained touch of earthiness that adds welcome complexity without dominating. As the ice melts, the profile softens and integrates beautifully, with sweet potato remaining firmly in front and carrying cleanly through to the finish. This encourages returning for another sip without fatigue.

Straight: Smooth and richly textured, with sweetness pitched at just the right level to make regular neat sipping feel comfortable and enjoyable. All the elements from the nose and on-the-rocks presentation appear here with slightly greater intensity and clarity. The sweet potato takes on a deeper, almost roasted quality that shines especially on the finish, delivering wave after wave of potato flavor alongside supporting notes of grain, vanilla, and dried fruit.

Paired with Chocolate: Kaldi 70% cocoa, beautifully rich, A beautifully rich pairing. Hachiman amplifies the deep cocoa notes and expands their range, adding hints of vanilla and a subtle earthy foundation that ties everything together seamlessly. As seen in previous pairings with this chocolate, a distinct dark chocolate–cherry character emerges—particularly on the finish—making this combination highly enjoyable and well worth trying.

Reflections on this shōchū

  • After thoroughly enjoying the first bottle of Inishie Hachiman, I picked up another over the holidays—and it did not disappoint in the slightest. This remains a standout expression, well worth seeking out, especially if you’re looking for a high-quality sweet potato shōchū suitable for daily drinking.

  • The bottle itself is attractive, though the label is exceptionally sticky. Today it put up quite a fight when I tried to remove it, but fortunately I was able to find a clean digital copy online—not something that usually happens.
