Enjoy on the rocks

In the bottle: Strong sake notes dominate immediately, delivering a fruity nose that leans sweet and heavy yet remains very enjoyable. Syrupy fruits—apricots, peaches, and lychee—lead upfront, intertwined with velvety chocolate that brings everything together and creates a distinct dessert-drink impression. Typical of sake kasu (kasutori) shōchū, it presents as an intense, concentrated sake experience in a sippable, distilled format. The nose builds excellent anticipation for the palate—rich, layered, and inviting.

On the rocks: Thick and rich from the start, with an outstanding mouthfeel that carries the intense sake notes seamlessly throughout. Velvety chocolate and dried fruits (primarily apricots and dates) dominate, holding strong even as ice melts. The finish is particularly good: sweetness ebbs and flows between chocolate and dark chocolate tones before settling into a gentle, general sweetness. The dilution from melting ice softens the edges without losing depth—making this a quite enjoyable experience when sipping slowly.  

Straight: Super smooth and intensely chocolatey. The first sip brings velvety richness coated in warm sweetness that lingers luxuriously on the palate. At room temperature, it feels like an after-dinner treat; chilling (or on the rocks) would likely enhance the fruity notes further, though they remained subdued during this tasting. Sadly, the bottle was nearly empty—no chance to test chilled. Neat in the glass definitely emphasizes the shōchū’s decadent, chocolate-forward maturity.

Paired with Chocolate: A pairing made in heaven for chocolate lovers. The combination is intensely rich: the cocoa explodes into velvety depth, gaining a nutty finish reminiscent of dark chocolate with almonds or hazelnuts. The interplay is absolutely smashing—the shōchū amplifies the chocolate’s complexity while the chocolate rounds out the sake-derived sweetness and fruit into something harmonious and indulgent. One of the strongest chocolate pairings encountered; this would make an exceptional dessert companion or ingredient.

Reflections on this shōchū

  • Shichida Kasutori Shōchū (from Shichida Shuzō) is a premium sake kasu expression distilled from their renowned ginjo/daiginjo lees, retaining vivid sake aromatics (fruity melon/peach/apricot, velvety chocolate, syrupy dried fruit) in a smooth, concentrated form. The result is clean yet decadent—sake-like intensity without the overwhelming drinkability of undiluted sake, perfect for slow sipping on the rocks or neat.

  • Overall, Shichida bridges sake and shōchū seamlessly, with exceptional richness and food-pairing potential (especially dark chocolate). A standout for sake enthusiasts exploring shōchū or anyone seeking a luxurious, dessert-oriented kasutori shochu; highly recommended—especially with 70%+ dark chocolate.
