  • 米麹(熊本産) Rice, Rice Koji (Kumamoto)

In the bottle: At first soft and unassuming, not overpowering at all. But once you nose deeper, a beautiful rice shōchū character emerges—subtle vanilla and toasted rice notes. With oxygen, slight sweetness appears alongside earthy musty hay tones. Overall, Mushagaeshi has a refined, inviting nose that clearly signals what’s in the bottle: clean, layered, and highly anticipatory for the palate.

On the rocks: The first sip delivers a strong rice shōchū experience full of peaks and valleys—intense and dynamic. Once that initial wave subsides, it mellows into lingering toasted rice with vanilla and caramel undertones, absolutely enjoyable. As ice melts, everything becomes remarkably smooth while key flavors stay front and center. This was one of the best bottles opened in 2022; it highlights why Jūfuku Shuzō deserves more exploration.

Straight: Starts a bit sharp but quickly fades into a wash of sweet toasted rice, grain, and mature vanilla. Mushagaeshi is really smooth neat—intense yet composed. The finish stands out: rice, vanilla, and milk caramel linger beautifully, encouraging slow, sip-by-sip enjoyment. Neat service lets the rice purity and subtle sweetness shine without dilution softening the edges.

水割り Diluted with water

4:1 ratio: Definitely the magic ratios for enjoying multiple glasses. Flavors remain strong and well-defined—toasted rice stays prominent with a light caramel finish that lingers pleasantly. The dilution softens sharpness while preserving balance and drinkability—ideal a night of drinking.

2:3 ratio: Becomes very smooth and light, with toasted rice noticeably less pronounced. The light caramel finish persists, evoking stroopwafels—pleasant but less impactful. Higher dilution mutes some of the vibrancy that defines the shōchū.

Paired with Chocolate: A really nice pairing. The chocolate takes on richer cocoa depth, while the toasted rice brings back memories of old Crackle candy bars (rice krispies inside). Typical cherry liqueur notes appear as expected in shōchū-chocolate pairings, tying everything together. The interplay adds warmth and complexity—cohesive, enjoyable, and worth repeating.
