Name: 1983年醸造 室町 1983 Muromachi
Type: 米焼酎 Rice shōchū
常圧蒸留: 減圧蒸留 (Vacuum Distillation)
Ingredients:
-
米(雄町米)Rice (Omachimai)
-
米麹(国産米) Rice Koji (Domestic)
Alcohol: 35%

In the bottle: Smooth, rich, and delicious at the start, with a strong, mature burnt caramel aroma that pours out as if it has been waiting since 1983 to emerge. The nose is intoxicating in its richness and complexity—deep, layered, and full of anticipation—before even reaching the glass. Beyond the burnt caramel, a really nice earthy funk spreads with oxygen exposure, giving a true sense of its 42-year age. Absolutely amazing overall; the profile feels complete and deeply rewarding
On the rocks: Absolutely amazing. Vanilla, custard, and burnt caramel notes are off-the-charts intense. The flavors arrive with such power and clarity that it's hard to believe this bottle is 42 years old; yet the maturity shines through in a way unlike anything else tasted (except perhaps another 30+ year-old rice shōchū). The aging brings exceptional depth and refinement without heaviness. On the rocks proves a great way to enjoy this rare, long-awaited gem—allowing the layers to unfold slowly and luxuriously.
Straight: Smooth and silky, Muromachi sips like a true after-dinner drink. Sweet caramel and custardy vanilla dominate center stage and never relent, creating a rich, comforting experience. The finish stands out: long-lasting, with the 35% ABV (noted here, though vintage strength may vary slightly) carrying beautiful earthiness through to the end. Neat in the glass highlights the shōchū’s maturity and elegance perfectly.
Paired with dark chocolate: Tony's 70% dark chocolate. I knew it would be amazing before trying, and Muromachi did not disappoint. The chocolate becomes divine, while the shōchū adds a beautiful earthy vanilla that expands everything beyond expectations. It feels like the pairing unlocks hidden depths in both—the chocolate gains warmth and complexity, the shōchū gains silky richness. Simply amazing; one of the strongest chocolate pairings encountered.

Reflections on this shōchū
-
A few years ago I traded in some JAL miles for this bottle and let it sit on the shelf. Finally opening it felt like uncovering a time capsule—42 years of history distilled into a shōchū that emerges from its long nap as something truly special. For a bottle of this age, it’s not just about the liquid; it’s about appreciating the patience, craftsmanship, and quiet evolution that went into it. Every sip feels deliberate and rewarding—rich, layered, and remarkably vibrant despite the decades.
-
The experience reinforced how rare and precious long-aged shōchū can be: burnt caramel, vanilla-custard depth, earthy maturity, and flawless smoothness that make it sip-by-sip contemplation rather than casual drinking. It’s history in a glass, and it delivers on every level.
-
Recently discovered that Muromachi Shuzō is only about 2 hours from my house by car. A road trip was inevitable—visited the distillery, met the people behind the bottles, and came back with several new additions to the shelf. Seeing the online store price at just 5,500 JPY for this kind of vintage expression is beyond a steal; it’s almost unbelievable for something so rare and refined.
-
Road trip complete, and now there are lots of new bottles waiting to be explored. Muromachi has earned a permanent spot in the rotation—whether revisiting the 1983 or diving into whatever else they have in the lineup. If you ever get the chance to find or visit this distillery, don’t hesitate. Aged rice shōchū at this level is a privilege, and this bottle (and the experience around it) was unforgettable. Highly recommended for anyone who values maturity, depth, and a sense of occasion in their shōchū.

Name: ぼっけえ武 Bokke Musashi
Type: 米・酒粕焼酎 Rice / Sake Kasu Shōchū
常圧蒸留: 単式蒸留 (Pot Distillation)
Ingredients:
-
米(雄町米)Rice (Omachimai)
-
酒粕(室町酒) Sake Kasu (Muromachi)
Alcohol: 25%
In the bottle: Incredibly fragrant and smooth, with strong fruit notes leading—primarily fresh cherry that evokes a bit of cherry tobacco, backed by syrupy fruit and lychee. Initially it feels like sweetness should dominate, but the profile stays remarkably dry, with subtle earthiness rising underneath. Bokke Musashi creates an intriguing contrast between fruity brightness and earthy depth, building strong anticipation for the palate. The nose is clean, layered, and highly inviting.
On the rocks: The cherry notes are among the most pronounced encountered—dry rather than sweet, and exceptionally smooth. As ice melts and introduces light dilution, a savory, funky earthiness emerges (best described as deeply mushroom-like), suggesting excellent pairing potential with dishes like mushroom cream sauce over beef or pork. After further resting, the earthiness recedes, allowing subtle sweetness to intertwine with the dry cherry, adding character and complexity. The evolution over the glass is fascinating—fresh to funky to balanced—making it highly engaging and drinkable.
Straight: Smooth barely captures it—nothing feels heavy or overpowering. Much of the nose translates seamlessly: cherry tobacco, earthy undertones, and a beautiful chocolate note that bridges the fruitiness and earthiness in perfect harmony. The finish brings intriguing cherry tobacco waves, shifting between slight sharp pepper and dry fruit, tying everything together with elegance and lingering complexity. Neat service highlights the shōchū’s refinement, balance, and depth without dilution softening any edges.
Paired with dark chocolate: The dryness of the cherry note in Bokke Musashi dramatically expands when paired with the Café Tasse 60% dark chocolate, amplifying the cacao while evoking a very familiar dark cherry chocolate tart vibe. The interaction is really amazing—the shōchū’s dry cherry tobacco character melds seamlessly with the chocolate’s bitterness, creating a rich, tart-fruit depth that feels cohesive and elevated. While the chocolate itself isn’t the absolute best (solid but not exceptional), the overall pairing works quite well.

Bokke Musashi is a distinctive sweet potato shōchū that thrives on contrast—vibrant dry cherry/fruit forward, grounded by earthy funk and subtle chocolate-pepper layers. It feels both fresh and mature, with exceptional smoothness and versatility across neat and on-the-rocks service.
-
A standout for those who enjoy aromatic, unconventional imo shōchū that balance fruit, earth, and spice without excess sweetness. Highly enjoyable and memorable—one of those bottles that lingers in the mind long after the glass is empty.
