Name: メローコヅル Mellowed Kozura 2023

Type: 米焼酎 Rice shōchū 2023 limited release, 3000 bottles aged in Bourbon barrels
常圧蒸留: 単式蒸留機 (Pot Still)

Ingredients:

  • 米(国産)Rice (Domestic)

  • 米麹(国産) Rice Koji (Domestic)

Alcohol: 41%

In the bottle: The alcohol starts quite out in front—not in a harsh way, but more like preparation for what’s in the bottle. Once it opens up a bit, everything changes as the bourbon cask notes really surface. There’s a nutty sweetness that reminds me a little of those chewy peanut candies from Taiwan—it’s hard to place exactly, but definitely leaning confectionary. This is counterbalanced nicely by beautiful oaky flavors that tie everything together. The nose is rich, warm, and layered, building strong anticipation for the glass.

On the rocks: Almost too smooth. At 41%, Kozura is dangerously drinkable—rich and full-bodied while somehow staying fresh and light in the mouth, a great combination for something you want to enjoy more than one glass. On the rocks gives a very similar profile to neat: beautiful waves of oak followed by a soft sweetness that reminds me of cherry vanilla and custard. The finish retains strong cocoa notes, but the slight bitterness is replaced by candied vanilla that lingers just long enough to welcome the next sip. Really enjoyable and easy to keep going back to.

Straight: Neat in the glass is an absolutely amazing experience. The oak gives Kozura a whiskey-like mouthfeel with a perfect amount of warmth that goes down nice and smooth. It’s full of beautiful vanilla and custard on the front and cocoa on the back, adding great balance. The finish gives several waves of mature oak that are carried perfectly by the 41% alcohol—lingering, refined, and deeply satisfying. A standout way to enjoy this aged shōchū.

Paired with dark chocolate: Sadly by the time I got to the last glass, I realized I had no chocolate...

Enjoy Straight or On-the-rocks

Reflections on this shōchū

  • See it, buy it, drink it.

  • One of the better bottles I have opened in a long time, and that is saying something considering I have been lucky to open some amazing bottles. This one stands out for its depth, smoothness, and perfect balance—rich oak influence, vanilla, cherry, toasted rice, and subtle caramel all working together without any one element taking over. It feels mature and refined, yet still very approachable and drinkable.

  • If you are a fan of barrel-aged rice shōchū then this is the bottle to try. It was a bit on the pricey side, but I never felt it to be overpriced—the quality, complexity, and enjoyment justify every yen. The aging brings real sophistication without heaviness, making it ideal for slow sipping neat or on the rocks.
